ALTERNATIVE OYSTER POSTHARVEST PROCESSING SYSTEMS

A collaborative research and outreach program on oyster postharvest processing was jointly undertaken by the Mississippi State University-Coastal Research and Extension Center and the Mississippi Department of Marine Resources-Seafood Technology Bureau.

Commercial Postharvest Processing Systems.

Experimental Postharvest Processing System. 1999 - 2007. The goal of this project was to evaluate the economic viability of alternative postharvest processing systems for raw oyster products which would be in compliance with proposed federal regulations and satisfy market constraints imposed by individual states.

Publications on Consumer Preferences for Oysters, 1999 - 2007. Consumer attitudes and preferences toward raw and postharvest
processed oysters were evaluated from results of consumer surveys conducted through personal and telephone interviews. The goal of this project is to determine the impact of consumer’s perceptions of the attributes of raw oysters and their own personal characteristics on their raw oyster consumption decisions.

U.S. Commercial Aquaculture Landings - Oysters, 1983 - present. Estimates of U. S. aquaculture production are based on data (in millions) released by the Fisheries Statistics and Economics Division of the National Marine Fisheries Service.
